To make authentic idlis, one needs the idli maker and an idli stand. This idli stand has four round tiers, 7.75 inches in diameter. Each tier has four concave depressions where the idli batter is poured. The trays are stacked and secured through a center rod, then placed in its covered pot with just enough boiling water to keep the bottom tray dry. The water should not touch the back of the bottom plate. Directions To Use : - Grease the idli molds and spoon the batter into them. - The steam holes should alternate so there is effective steam distribution.Heat water in the idli maker. Steam the idlies for about 12-15 mins.The whistle is the indicator of the food steaming in the idli maker.The whistle noise is more when there is water in the Idli maker. If the whistle noise is less , it indicates that there is less or no water inside the pot.Always steam your idlies in medium to low flame setting.This is a steamer pot. The steam should come out of the whistle but if the volume of the steam produced is more than what can come out of the whistle it will come out through the lid and will let the lid pop off.Reduce the heat setting in the stove and this will resolve the issue.Please do not use the idli maker without water it will burn and discolor the bottom of the idli maker.If there is more water in the idli maker, it will get into the bottom rack and will not cook the idlies properly. Take out the Idli stand from Idli maker and let cool for a while and then remove the idlies from the molds.
