All of our coconut butters are ground from the meat of the coconut, which means they contain coconut oil. Besides being one of the healthiest foods on the planet, coconut oil is also extremely sensitive to temperature. If your jar arrived above 75 degrees Fahrenheit, the coconut oil should become liquid and your coconut butter should have a nice creamy texture. The oil may have separated near the top, but just like a natural almond butter or peanut butter, you can either close the lid and shake the jar or you can mix it in with a spoon.
If your jar arrived below 75 degrees Fahrenheit, the coconut butter should be a solid texture. Sometimes, the coconut oil will separate first and then will solidify on top. Do not be alarmed. This is not mold. The coconut oil on top is one of the healthiest parts of the coconut butter and just needs to be reheated so it can be mixed back in. We recommend heating the jar above 80 degrees so that the oil becomes liquid and can be stirred in with the rest of the coconut butter. This can be done by microwaving the jar for 30-40 seconds. "
