Molino Grassi and Mr Claudio Grossi, a farmer from Parma, have joined forces to protect the biodiversity and the local environment in the province of Parma. Working together to recover ancient local grain varieties, they have rediscovered the "Grano del Miracolo" or Miracle Grain. This forgotten wheat variety is richer in phosphorous, iron and antioxidants, ideal for maintaining the flavor and aroma of baked products. The gluten digests easier than any other wheat flour.
This soft wheat flour type "1" is obtained with only 2 varieties of ancient grains, Miracolo and Virgilio. It is perfect for breads, pizza, focaccia or for making pasta.
Molino Grassi is the product of three generations, from founder to grandchildren, of innovation in processing soft and durum wheat in Parma, Italy, the most important cereal-growing region of Northern Italy. Molino Grassi began processing soft wheat for breadmaking back in 1934. By the 60s, they began producing semolina flour. By the 90s they had branched into organic flours. Today, as a result of being pioneers in the organic sector, they are the benchmark for organic and food safety guarantee throughout Europe.
