Over time, clay pots will become seasoned and darken each time you cook with them. Never use scouring powders because they will clog the pores and make the dish useless. Salt can be used as an abrasive cleanser. For general washing, wait until the dish cools, wash it in warm water with a very small amount of dishwashing liquid and rinse thoroughly. Terra cotta stains can be tricky because the terracotta material is so porous that the stains go much deeper than the surface. Do not expect to be able to keep the unglazed side of the terra cotta dish totally free of stains from oil or grease. With everyday use your dish will develop a well seasoned look. Care should be taken in using clay dishes for cooking. Obviously, there is breakage concern, either by handling or adding cold water to a hot dish. When a hot clay dish is removed from an oven, it should not be placed on any cold surface, which may cause the disht to crack. Hot liquids should not be added to a cold dish and similarly, do not place the cold clay dish into a preheated oven or it may cause the dish to crack. Any type of earthenware pots should never be placed in or on the heat while empty, and all earthenware should be placed in a cold oven, then brought up to the correct heat gradually.
