Meat from the kangaroo has a natural deep red color with no visible fat, the textured is a fine soft meat with tender muscle fiber, virtually no fat and little connective tissue. Kangaroo meat is best served rare or medium rare rather than well done. When not overcooked and rested after cooking it is also juicy.
It is a well-flavored meat with the intensity of the flavor ranging from subtle in young animals to distinctively gamey in older animals. Kangaroo responds well to aromatic spices and strong flavored vegetables.
