Raclette is the world's most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. This cheese is traditionally melted (a half wheel is placed in a fireplace, then the melted top surface is continuously scraped off) and layered atop boiled potatoes, pickles, fresh vegetables and sliced meats. The Raclette comes in light brown wheels and is made from raw cow's milk. Its ripening time is 8 weeks minimum. It is characterized by its fragrant and sweet taste in the mouth. Traditionally each person melts the cheese in the raclette grill placed in the center of the table. It can be served along with potatoes, sausage & other condiments. Raclette may be the world's most famous melting cheese, and it is made in the Savoie region of the Alps, in Switzerland and in France. Our French version is made of cow's milk and matured for at least 5 months in respect of the French cheese tradition. It is during this long ripening period that the flavor and excellent melting qualities develop. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Raclette de Savoie, from the Savoie region has won the gold medal at the Concours general in 2006, in Paris.
