The carob (Ceratonia siliqua, St. Johns Bread) is a species of flowering evergreen shrub or tree in the same plant family as beans and peas. It is widely cultivated for its edible legumes, and as an ornamental tree in gardens. Carob is typically dried or roasted, and is mildly sweet. In powdered, chip, or syrup form it is used as an ingredient in cakes and cookies, and is used as a substitute for chocolate. The seeds, also known as locust beans, are used as animal feed, and are the source of locust bean gum ? a food thickening agent. Crushed pods may be used to make a beverage; compote, liqueur, and syrup are made from carob in Turkey, Malta, Portugal, Spain and Sicily. Carob has excellent nutritional value. Along with up to 80% protein, it contains Magnesium, Calcium, Iron, Phosphorus, Potassium Manganese, Barium, Copper, Nickel and the vitamins A, B, B2, B3, and D. Carob is caffeine free, oxalic acid free and no theobromine, thenylthylamine and tyramine.
